Veg Kadai with Roti

Veg Kadai is a delicious and flavourful vegetarian dish from India that's made with a mix of vegetables, spices and a tomato-based gravy. It's usually served with roti or naan. Here's a recipe to make Veg Kadai with Roti at home

Ingredients


For the Veg Kadai


1 cup mixed vegetables (cauliflower, carrots, beans, peas, potatoes), chopped

2-3 tomatoes, chopped

1 onion, chopped

1 green bell pepper, chopped

1 tsp ginger paste

1 tsp garlic paste

1-2 green chillies, finely chopped

1 tsp cumin seeds

1 tsp coriander powder

1/2 tsp turmeric powder

1/2 tsp garam masala powder

1/2 tsp red chilli powder (adjust to taste)

1/4 cup fresh cream

2-3 tbsp oil

Salt, to taste

Fresh coriander leaves, chopped for garnish


For the Roti


2 cups wheat flour

1 tsp salt

1 tbsp oil

Water, as required


Instructions


To make the Veg Kadai, heat oil in a pan or kadhai over medium heat. Add cumin seeds and let them splutter.

Add the chopped onions and sauté until they turn golden brown.

Add ginger paste, garlic paste and green chillies, and sauté for a minute until fragrant.

Add the chopped tomatoes and cook for 5-6 minutes until they turn soft and pulpy.

Add coriander powder, turmeric powder, garam masala powder, red chilli powder and salt. Mix well and fry for 1-2 minutes until the spices are fragrant.

Add the mixed vegetables and 1-2 cups of water to the pan, cover and cook on medium heat until the vegetables are cooked and tender.

Once the vegetables are cooked, add the chopped green bell pepper and mix well.

Add fresh cream to the pan and mix gently.

Cook for 2-3 minutes until the gravy thickens and the vegetables are heated through.

Garnish with chopped coriander leaves and serve hot with roti.


To make the Roti


In a mixing bowl, add wheat flour, salt and oil. Mix well.

Add water gradually and knead the dough until it's smooth and elastic.

Divide the dough into small equal-sized balls and roll them into thin, circular rotis.

Heat a tawa or flat griddle over medium heat. Place the roti on the tawa and cook until it starts to puff up.

Flip the roti and cook on the other side until it's cooked through.

Repeat the process for the remaining rotis.

Veg Kadai with Roti is a perfect meal for vegetarians and anyone who loves flavourful and comforting Indian food.
