Classic Beef Noodle Soup

Ingredients

1 pound of beef chuck roast, cut into small pieces 1 tablespoon of vegetable oil 1 large onion, chopped 3 garlic cloves, minced 1 tablespoon of ginger, grated 6 cups of beef broth 2 cups of water 1 tablespoon of soy sauce 1 tablespoon of fish sauce 1 tablespoon of hoisin sauce 1 tablespoon of rice vinegar 1 teaspoon of sugar 1/2 teaspoon of salt 8 ounces of rice noodles 2 cups of fresh spinach 1/2 cup of cilantro, chopped 1 lime, cut into wedges Instructions In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set it aside. Add the chopped onion to the pot and cook until softened, about 3-4 minutes. Add the garlic and ginger and cook for an additional 1-2 minutes, stirring frequently. Return the beef to the pot and add the beef broth, water, soy sauce, fish sauce, hoisin sauce, rice vinegar, sugar, and salt. Bring the mixture to a boil and then reduce the heat to low. Simmer the soup for 1-2 hours, or until the beef is tender. While the soup is simmering, prepare the rice noodles according to the package instructions. Once the beef is tender, add the cooked rice noodles and fresh spinach to the pot. Stir until the spinach is wilted and the noodles are heated through.
