Chicken Kebab

Chicken kebab is a popular Middle Eastern and Mediterranean dish consisting of marinated pieces of chicken that are skewered and grilled or baked. The chicken is typically cut into cubes and marinated in a flavorful mixture of herbs, spices, and oil to tenderize and infuse it with flavor

Ingredients


1 pound boneless, skinless chicken breasts, cut into cubes

1/4 cup olive oil

2 tablespoons lemon juice

2 cloves garlic, minced

1 tablespoon paprika

1 teaspoon ground cumin

1/2 teaspoon ground coriander

Salt and pepper to taste

Skewers

Optional: sliced onions, bell peppers, and/or mushrooms for skewering 


Instructions


In a large bowl, whisk together the olive oil, lemon juice, garlic, paprika, cumin, coriander, salt, and pepper.

Add the chicken cubes to the marinade and toss until well coated. Cover and refrigerate for at least 30 minutes or up to 4 hours.

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Preheat a grill or grill pan to medium-high heat.

Thread the marinated chicken cubes onto the skewers, alternating with any optional vegetables you'd like to add.

Grill the kebabs for about 10-12 minutes, turning occasionally, until the chicken is cooked through and lightly charred on the outside.

Serve hot with your favorite dipping sauce or over a bed of rice or salad. Enjoy!


Note: You can also bake the kebabs in the oven at 400°F for 15-20 minutes, or until cooked through.
