Wash and clean the chicken legs or drumsticks and make deep slits on them with a knife. This will help the marinade penetrate the chicken better.
In a large mixing bowl, combine the yogurt, ginger-garlic paste, lemon juice, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, salt, and red food coloring (if using).
Mix the marinade ingredients together until they are well combined.
Add the chicken to the marinade and rub the marinade into the chicken, making sure to get it into the slits you made earlier. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight.
Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and lightly grease it with vegetable oil.
Remove the chicken from the marinade and place it on the prepared baking sheet. Brush the chicken with a little vegetable oil.
Bake the chicken in the preheated oven for 25-30 minutes, or until it is cooked through and the outside is slightly charred. You can also grill the chicken over medium-high heat for 12-15 minutes per side.
Serve the tandoori chicken hot with lemon wedges, sliced onions, and mint chutney.
