Kesari Rice Kheer

Kheer is a sweet and creamy Indian dessert made with milk, sugar, and rice. The dish has a pudding-like consistency and is often flavored with cardamom, saffron, and nuts like almonds, pistachios, and cashews.

Ingredients


1 liter of full-fat milk

1/2 cup of basmati rice, washed and soaked for 30 minutes

1/2 cup of sugar

1/4 teaspoon of cardamom powder

A handful of chopped nuts (almonds, pistachios, cashews)

A few saffron strands


Instructions


In a heavy-bottomed pot, add the milk and bring it to a boil.

Add the soaked rice to the milk and let it cook on low heat for 30-40 minutes, stirring occasionally, until the rice is cooked and the milk has thickened.

Add the sugar and stir until it dissolves completely.

Add the cardamom powder, chopped nuts, and saffron strands (if using) and mix well.

Let the kheer cook for another 5-10 minutes, stirring occasionally, until it reaches a creamy consistency.

Turn off the heat and let the kheer cool down to room temperature.

Serve chilled or at room temperature, garnished with more chopped nuts.
