Gajar ka Halwa [ Carrot Halwa ]


Gajar ka Halwa is a traditional Indian dessert made with grated carrots, milk, sugar, and ghee (clarified butter). The dish is flavored with cardamom powder and chopped nuts like almonds, pistachios, and cashews, and it has a rich, sweet, and nutty flavor.

Ingredients

.1 kg of fresh carrots, peeled and grated
.1 liter of full-fat milk
.1 cup of sugar
.1/2 cup of ghee
.1/4 cup of chopped nuts (almonds, pistachios, cashews)
.1/4 teaspoon of cardamom powder
.A pinch of saffron strands (optional) 

Instructions

In a heavy-bottomed pot, add the grated carrots and milk and bring it to a boil.
Reduce the heat to low and let the mixture simmer for about 45-50 minutes, stirring occasionally, until the carrots have absorbed most of the milk and are cooked through.
Add the sugar and mix well. Keep stirring until the sugar has dissolved completely.
Add the ghee and continue stirring until the ghee has melted and mixed well with the carrots.
Add the chopped nuts, cardamom powder, and saffron strands (if using) and mix well.
Let the halwa cook for another 10-15 minutes, stirring occasionally, until it has thickened to a pudding-like consistency and the ghee starts to separate from the mixture.
Turn off the heat and let the halwa cool down to room temperature.
Serve warm or cold, garnished with more chopped nuts.
