Ingredients:
2 cups mixed vegetables (carrots, potatoes, cauliflower, green beans, peas)
1 large onion, finely chopped
2-3 garlic cloves, minced
1-inch piece of ginger, grated
2-3 tomatoes, finely chopped
1/2 cup grated coconut
1/2 teaspoon cumin seeds
1/2 teaspoon fennel seeds
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala powder
1 teaspoon red chili powder (adjust to taste)
1/4 teaspoon turmeric powder
Salt, to taste
3-4 tablespoons vegetable oil
2-3 bay leaves
2-3 cloves
2-3 green cardamom pods
1 cinnamon stick
1/4 cup chopped fresh cilantro
Instructions:
Heat the oil in a large pan or kadhai over medium heat.
Add the cumin seeds, fennel seeds, bay leaves, cloves, green cardamom pods, and cinnamon stick. Fry for a minute until fragrant.
Add the onions and sauté until they turn golden brown.
Add the garlic and ginger and sauté for a minute until fragrant.
Add the chopped tomatoes and cook for 5-6 minutes until the tomatoes turn soft and pulpy.
Add the grated coconut and fry for 3-4 minutes until the coconut turns golden brown.
Add the coriander powder, cumin powder, garam masala powder, red chili powder, turmeric powder, and salt. Mix well and fry for 1-2 minutes until the spices are fragrant.
Add the mixed vegetables and mix well with the spice mixture.
Add 1-2 cups of water to the pan, cover and cook on medium heat until the vegetables are cooked and tender.
Once the vegetables are cooked, mash some of them lightly with a spoon to make the gravy thicker.
Garnish with chopped cilantro and serve hot with roti or rice.
