Spring rolls

Spring rolls are a popular dish in many Asian cuisines, including Vietnamese, Chinese, and Thai. They consist of a thin, crispy wrapper made from rice paper or wheat flour, which is filled with various ingredients such as vegetables, and herbs.


Ingredients


For the filling

.2 cups thinly sliced cabbage

.1 cup grated carrot

.1 cup sliced mushrooms

.1 cup sliced bell peppers

.1 cup bean sprouts

.2 cloves garlic, minced

.2 tablespoons vegetable oil

.1 tablespoon soy sauce

.1 tablespoon cornstarch

.Salt and pepper to taste


For the spring rolls


.12 spring roll wrappers

.1 egg, beaten

.Oil for frying


For the dipping sauce


.1/4 cup soy sauce

.2 tablespoons rice vinegar

.1 tablespoon honey

.1 tablespoon minced ginger

.1 garlic clove, minced

.1/4 teaspoon red pepper flakes (optional)


Instructions


In a pan, heat 2 tablespoons of vegetable oil over medium-high heat. Add the minced garlic and stir-fry for 30 seconds. Add the sliced cabbage, grated carrot, sliced mushrooms, sliced bell peppers, and bean sprouts. Stir-fry for about 5 minutes, or until the vegetables are tender.

In a small bowl, mix together the soy sauce, cornstarch, salt, and pepper. Pour the mixture over the vegetables and stir-fry for another minute. Remove from heat and let it cool.

Lay a spring roll wrapper on a flat surface with one corner facing you. Place a heaping tablespoon of the vegetable filling in the center of the wrapper. Fold the corner facing you over the filling, then fold in the sides, and roll up tightly. Use a little bit of the beaten egg to seal the end of the wrapper.

Repeat with the remaining spring roll wrappers and filling.

Heat the oil in a deep frying pan over medium heat. Fry the spring rolls in batches until golden brown and crispy, turning occasionally.

To make the dipping sauce, whisk together the soy sauce, rice vinegar, honey, minced ginger, minced garlic, and red pepper flakes (if using) in a small bowl.

Serve the hot spring rolls with the dipping sauce on the side.
