Chicken Satay

Chicken satay is a popular Southeast Asian dish that typically consists of marinated, skewered, and grilled or broiled chicken pieces, served with a peanut sauce for dipping. The chicken is typically marinated in a mixture of spices, such as turmeric, cumin, coriander, and lemongrass, as well as coconut milk, which helps to tenderize the meat and infuse it with flavor.


Ingredients


For the marinade

.1/4 cup soy sauce
.1/4 cup brown sugar
.2 tablespoons vegetable oil
.1 tablespoon curry powder
.1 tablespoon turmeric
.1 tablespoon minced garlic
.1 tablespoon minced ginger
.1 tablespoon lime juice

For the chicken

.450 gm boneless, skinless chicken breasts, cut into thin strips
.Wooden skewers, soaked in water for 30 minutes 

For the peanut sauce

.1 cup creamy peanut butter
.1/2 cup coconut milk
.2 tablespoons soy sauce
.2 tablespoons brown sugar
.2 tablespoons lime juice
.1 teaspoon curry powder
.1 teaspoon sriracha (optional)

Instructions


In a mixing bowl, whisk together all the marinade ingredients until well combined.

Add the chicken strips to the marinade, stirring to coat well. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.

While the chicken is marinating, prepare the peanut sauce. In a small saucepan, combine all the peanut sauce ingredients over medium heat. Cook, stirring constantly, until the sauce is smooth and well combined. Remove from heat and set aside.

Preheat your grill or grill pan to medium-high heat.

Thread the marinated chicken strips onto the soaked wooden skewers.

Grill the chicken skewers for about 5-6 minutes on each side or until fully cooked through.

Serve the chicken skewers hot with the peanut sauce on the side for dipping.
