Classic Chicken Biryani is a popular South Asian dish that consists of fragrant, long-grain basmati rice layered with tender chicken pieces that have been marinated in a blend of aromatic spices and yogurt. The dish is then cooked in a pot, infusing the rice with the flavor of the spiced chicken, resulting in a flavorful and aromatic one-pot meal.
Ingredients
.1 kg chicken, cut into pieces
.4 cups basmati rice, washed and soaked for 30 minutes
.3 onions, thinly sliced
.2 tomatoes, chopped
.2 tbsp ginger-garlic paste
.1 cup yogurt
.1 tsp turmeric powder
.1 tsp red chili powder
.2 tsp biryani masala powder
.1/2 tsp cumin seeds
.1 cinnamon stick
.4 cloves
.4 green cardamom pods
.2 bay leaves
.4 tbsp ghee or vegetable oil
.Salt, to taste
.Water, as needed
Instructions
In a large pot, heat the ghee or vegetable oil over medium heat. Add the onions and cook until golden brown.
Add the ginger-garlic paste, cumin seeds, cinnamon stick, cloves, green cardamom pods, and bay leaves. Cook for 1-2 minutes.
Add the chicken and cook until it is no longer pink. Add the tomatoes, turmeric powder, red chili powder, biryani masala powder, and salt. Cook for 5-7 minutes.
In a separate pot, bring 8 cups of water to a boil. Add the soaked rice and cook until it is half done. Drain the water and set the rice aside.
In a large pot, layer the rice and chicken mixture. Pour yogurt on top of the chicken mixture.
Cover the pot and cook on low heat for 20-25 minutes or until the rice is fully cooked.
Serve hot with raita and salad.
