Perkins Pancakes

Perkins Pancakes are famous for their light and fluffy texture. Here's a recipe that approximates the Perkins Pancake recipe that you can make at home.


Ingredients


.1 1/2 cups all-purpose flour

.1/2 cup cake flour

.2 tablespoons sugar

.2 tablespoons baking powder

.1/2 teaspoon salt

.1/4 cup vegetable oil

.1 egg

.1 1/2 cups milk

.1/4 cup unsalted butter, melted

.Cooking spray


Instructions


In a mixing bowl, whisk together the all-purpose flour, cake flour, sugar, baking powder, and salt.

In a separate mixing bowl, whisk together the vegetable oil, egg, milk, and melted butter.

Add the wet ingredients to the dry ingredients and whisk until the batter is smooth and no lumps remain.

Preheat a non-stick griddle or skillet over medium-high heat.

Lightly spray the griddle or skillet with cooking spray.

Using a ladle or large spoon, pour 1/4 to 1/3 cup of batter onto the griddle or skillet.

Cook the pancake until the top is covered with bubbles and the edges look set, about 2-3 minutes.

Use a spatula to flip the pancake and cook the other side until golden brown, about 1-2 minutes.

Transfer the pancake to a plate and repeat with the remaining batter.

Serve the pancakes warm with your favorite toppings, such as butter and syrup, fresh fruit, or whipped cream.
