2 tomatoes, chopped
1 tablespoon ginger-garlic paste
2 green chilies, chopped
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon garam masala powder
1 tablespoon butter
1 tablespoon oil
Salt to taste
Water as required
Instructions
Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain the water and blend the spinach into a smooth paste using a blender or food processor. Keep it aside.
Heat oil in a pan and add cumin seeds. Once the seeds start spluttering, add chopped onions and sauté until they turn golden brown.
Add ginger-garlic paste and green chilies and sauté for a minute. Then, add chopped tomatoes and cook until they become soft.
Add coriander powder, turmeric powder, red chili powder, and garam masala powder, and mix well. Cook the mixture for 2-3 minutes.
Add the spinach paste to the pan and mix well. Add some water to adjust the consistency of the gravy. Let it simmer for 5-6 minutes.
Add paneer cubes and mix gently. Cook for another 2-3 minutes.
Finally, add butter and salt to taste. Mix well and turn off the flame.
Your palak paneer is ready to be served. Garnish it with some fresh cream and coriander leaves. You can enjoy it with naan, roti, or rice.
