Hyderabadi Biryani Saverfeast

Hyderabadi Biryani is a popular and flavorful rice dish that originated in the city of Hyderabad in South India. It is made with basmati rice, meat (usually chicken or lamb), aromatic spices, and herbs.


Ingredients

500g Basmati rice
500g boneless chicken, cut into small pieces
2 onions, thinly sliced
2 tbsp ginger-garlic paste
2 tbsp biryani masala powder
1 tsp turmeric powder
1 tsp red chili powder
1 cup yogurt
1/2 cup mint leaves, chopped
1/2 cup coriander leaves, chopped
2-3 green chilies, chopped
1/2 cup ghee or oil
Salt to taste
1 tsp whole spices (cumin seeds, cardamom, cinnamon, cloves, bay leaf)
Saffron strands, soaked in milk
Fried onions for garnish

Instructions

Wash the basmati rice thoroughly in cold water and soak it in water for about 30 minutes.
Heat oil or ghee in a large pot and add whole spices. Fry until they release their aroma.
Add sliced onions and fry until they turn golden brown.
Add ginger-garlic paste and fry for a minute.
Add chicken pieces and cook until they turn white.
Add biryani masala powder, turmeric powder, red chili powder, and salt. Mix well.
Add yogurt, mint leaves, coriander leaves, and green chilies. Mix well and cook for a few minutes.
Drain the soaked rice and add it to the pot. Mix gently.
Add enough water to cover the rice and bring it to a boil.
Reduce the heat to low, cover the pot with a lid and cook for about 15-20 minutes, or until the rice is cooked and the water has evaporated.
Once the rice is cooked, remove the pot from the heat and let it sit for about 10 minutes.
Garnish with saffron milk and fried onions.
