Easy Scrambled Eggs with Avocado Toast
The combination of eggs and avocado ensures a whole range of properties essential to protect brain cells. "The 'good' fats, which it's rich in, keep neurons healthy. They also help to metabolize glucose and promote brain activity
Ingredients
.2 large eggs
.1/4 cup milk
.Salt and pepper to taste
.1 tbsp butter
.2 slices of bread
.1/2 avocado
.Lemon juice
.Salt and pepper
.Optional toppings: sliced tomatoes, crumbled feta cheese, or hot sauce
Instructions
Crack the eggs into a bowl and add the milk, salt, and pepper. Whisk the ingredients together until well combined.
Heat a nonstick skillet over medium heat and add the butter. Once the butter has melted, add the egg mixture to the skillet.
Cook the eggs for 1-2 minutes, stirring occasionally, until they are cooked through but still moist.
Toast the bread slices and spread the mashed avocado on top. Drizzle with lemon juice and sprinkle with salt and pepper.
Serve the scrambled eggs alongside the avocado toast. Top with any desired toppings.
