Ingredients
.2 cups graham cracker crumbs
.1/2 cup unsalted butter, melted
.4 (250 gm) packages cream cheese, softened
.1 1/2 cups granulated sugar
.3/4 cup milk
.4 large eggs
.1 cup sour cream
.2 teaspoons vanilla extract
Instructions
Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
In a bowl, mix together the graham cracker crumbs and melted butter. Press the mixture onto the bottom and halfway up the sides of the prepared pan.
In a large mixing bowl, beat the cream cheese and sugar until smooth.
Add the milk and mix well.
Add the eggs, one at a time, beating well after each addition.
Stir in the sour cream and vanilla extract.
Pour the mixture over the crust and smooth out the top.
Bake the cheesecake for 1 hour or until the edges are set but the center still jiggles slightly.
Turn off the oven and let the cheesecake cool in the oven with the door cracked open for 30 minutes.
Remove the cheesecake from the oven and let it cool to room temperature.
Refrigerate the cheesecake for at least 4 hours, or overnight.
